Job Description:

Overnight Cook duties are to plan, prep, set up and provide quality service in all areas of food production for menu items and specials in the designated outlets in accordance with standards and plating guide specifications.  Maintain organization, cleanliness and sanitation of work areas and equipment while preparing food to order for guests of the hotel.

General Responsibilities Include:

  • Maintain complete knowledge of and comply with all departmental policies/service procedures/standards.

  • Knowledgeable in classic and modern cooking methods and techniques.

  • Assumes 100% responsibility for quality of products served.

  • Prepares a variety of meats, seafood, poultry, vegetables and other food items for their station, and to be ready for service in a promptly manner.

  • Handles, stores, labels, and rotates all products properly and in accordance to applicable state laws

  • Comply with all safety and health department procedures as well as L’Ermitage and/or departmental policies/procedures.  Comply with all state and federal laws.
  • Maintain complete knowledge of and comply with all departmental policies/service procedures/standards.

Skills/Knowledge Required:

  • Must poses a positive attitude and work well with other team members

  • Compute basic arithmetic.

  • Provide legible communication.

  • Highly responsible & reliable to work through the shift without a supervising manager

  • Must be flexible on shifts and days off.

  • Physical Requirements

  • Must be able to stand or walk a minimum eight-hour shift.
  • Requires mobility and prolonged standing, walking, bending and lifting up to 50 lbs


Qualification Standards:

Education: Diploma/Degree in Culinary Arts or related discipline preferred

Experience: 2 years experience as a Cook or similar position at a Luxury Hotel or Restaurant preferred

Licenses or Certificates: ServeSafe certified required.

Grooming: All colleagues must maintain a neat, and well-groomed appearance in accordance with the property’s grooming standards (specific standards will be provided)
